Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup buttermilk
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
For the Frosting
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 0.25 cup milk
  • 1 tsp vanilla extract
  • 1 pinch salt
For Decoration
  • 1 box edible glitter or sprinkles New Year's themed

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour your baking pans.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In a separate bowl, combine the buttermilk, oil, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. Pour the batter evenly into the prepared baking pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  8. While the cakes cool, prepare the frosting. In a large bowl, beat the softened butter until creamy.
  9. Gradually add the powdered sugar, alternating with the milk, until smooth and fluffy. Stir in the vanilla extract and salt.
  10. Once the cakes are completely cool, frost them generously.
  11. Decorate with edible glitter or sprinkles for a festive New Year's Eve look.
  12. Chill the cakes for at least 60 minutes before serving to allow the frosting to set.

Notes

You can add food coloring to the frosting for a more vibrant look. Consider adding different flavors like chocolate or lemon to the cake batter for variety.
