Ingredients
  

Wet Ingredients
  • 3 very ripe bananas, mashed About 1 1/2 cups mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon Optional

Equipment

  • 9x5-inch Loaf Pan
  • Large mixing bowl

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, melted butter, sugar, egg, and vanilla extract until combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon, if using.
  4. Add the dry ingredients to the wet ingredients. Mix until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

For extra moisture, you can substitute 1/4 cup of the flour with 1/4 cup of sour cream or plain yogurt.
