- Arrange a rack in the center of the oven and preheat to 400°F (200°C). Prick potatoes all over with a fork or sharp knife. Drizzle with oil, then tightly wrap each potato in foil.
- Bake potatoes until a knife can be easily inserted into the center, about 1 hour.
- Unwrap potatoes and cut lengthwise slits in the top of each. Carefully scoop out the flesh from the center of each potato into a medium bowl. Add the white scallion parts, butter, chives, sour cream, half of the cheddar, and half of the bacon. Season with salt.
- Spoon the filling back into each potato shell, mounding it on top.
- Sprinkle the remaining cheese over the filled potatoes. Continue to bake until the cheese is melted, about 5 minutes. Top with the green scallion parts and the remaining bacon before serving.
