Loaded Baked Potatoes (Bar Night)

Prepare large baked potatoes and fill them with a creamy mixture of potato flesh, butter, sour cream, cheese, and bacon. Top with fresh scallions and more bacon for a satisfying meal.

Ingredients
  

Potatoes and Oil
  • 4 large russet potatoes
  • Extra-virgin olive oil for drizzling
Filling
  • 2 scallions thinly sliced, white and green parts separated
  • 4 Tbsp unsalted butter
  • 1/4 cup chives sliced
  • 1/4 cup sour cream
  • 3/4 cup shredded cheddar divided
  • 6 slices cooked crispy bacon crumbled, divided
  • Kosher salt

  • Fork or sharp knife
  • Medium bowl

Method
 

  1. Arrange a rack in the center of the oven and preheat to 400°F (200°C). Prick potatoes all over with a fork or sharp knife. Drizzle with oil, then tightly wrap each potato in foil.
  2. Bake potatoes until a knife can be easily inserted into the center, about 1 hour.
  3. Unwrap potatoes and cut lengthwise slits in the top of each. Carefully scoop out the flesh from the center of each potato into a medium bowl. Add the white scallion parts, butter, chives, sour cream, half of the cheddar, and half of the bacon. Season with salt.
  4. Spoon the filling back into each potato shell, mounding it on top.
  5. Sprinkle the remaining cheese over the filled potatoes. Continue to bake until the cheese is melted, about 5 minutes. Top with the green scallion parts and the remaining bacon before serving.
