- Trim any excess fat from the pork chops and pat them dry with a paper towel. This helps create a good sear.
- Season both sides of the chops generously with salt, pepper, and smoked paprika if you are using it.
- Heat the olive oil in a cast iron skillet or heavy-bottomed pan over medium-high heat until the oil shimmers.
- Place the pork chops in the hot pan without overcrowding. Sear for 3 to 4 minutes on each side until a golden crust forms. Do not flip them too often.
- Reduce the heat to medium. Add the butter to the pan. Stir in the minced garlic and baste the pork chops with the melted butter for 1 to 2 minutes.
- Check the internal temperature with a meat thermometer to confirm it has reached 145°F.
- Remove the chops from the pan and let them rest for 5 minutes before you serve them.
