- Preheat your oven to 400°F (200°C). Toss the potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
- Roast the potatoes for 20 to 25 minutes, or until they are tender and slightly browned. Remove them from the oven.
- While the potatoes roast, season the steak cubes with salt and pepper. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Sear the steak cubes in batches, turning them until they are browned on all sides and cooked to your desired doneness (about 3 to 5 minutes total for medium-rare). Remove the steak from the skillet and set aside.
- Reduce the heat to medium-low. Add the butter to the same skillet. Once melted, add the minced garlic and Italian seasoning. Cook for about 1 minute until the garlic is fragrant, being careful not to burn it.
- Return the cooked steak bites and the roasted potatoes to the skillet. Toss everything gently to coat it evenly in the garlic butter sauce.
- Remove the skillet from the heat. Sprinkle with fresh chopped parsley before serving immediately.

Notes
If you prefer crispier potatoes, you can roast them separately before starting the steak. For extra flavor, add a splash of Worcestershire sauce to the garlic butter mixture just before adding the steak back in.
