Herb Roasted Baby Potatoes

Ingredients
  

  • 4 pounds baby potatoes (1 ½-inch-diameter), scrubbed, cut into small pieces
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 kosher salt and freshly cracked black pepper to taste
  • 8 tablespoons mixed chopped fresh herbs (parsley, dill, and chives)

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit. Toss the potatoes with 2 tablespoons of olive oil and season with salt and pepper. Transfer the seasoned potatoes to 2 sheet pans and spread them out evenly.
  2. Roast the potatoes for 30 to 40 minutes, or until they are tender and crispy on the edges. Check them halfway through the cooking time and give them a toss.
  3. Heat the remaining oil in a large skillet over medium-high heat. Add the minced garlic and cook for 30 seconds. Add the roasted potatoes to the skillet. Heat for about 2 minutes to cook the garlic slightly, then add the fresh herbs. Sprinkle lightly with salt and pepper. Transfer the potatoes to a bowl and serve.
