- Preheat your oven to 425 degrees Fahrenheit. Toss the potatoes with 2 tablespoons of olive oil and season with salt and pepper. Transfer the seasoned potatoes to 2 sheet pans and spread them out evenly.
- Roast the potatoes for 30 to 40 minutes, or until they are tender and crispy on the edges. Check them halfway through the cooking time and give them a toss.
- Heat the remaining oil in a large skillet over medium-high heat. Add the minced garlic and cook for 30 seconds. Add the roasted potatoes to the skillet. Heat for about 2 minutes to cook the garlic slightly, then add the fresh herbs. Sprinkle lightly with salt and pepper. Transfer the potatoes to a bowl and serve.
