- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a large baking sheet and set it aside.
- Place the potato wedges in a large bowl. Drizzle them with olive oil and toss until they are fully coated. In a small bowl, whisk together the salt, garlic powder, and Italian seasoning.
- Sprinkle the potato wedges with the shredded cheese, tossing to coat them evenly. Then, sprinkle the seasoning mixture over the potatoes and toss again.
- Place the potato wedges on the prepared baking sheet in a single layer with the skin-sides down. Bake for 25 to 35 minutes until the potatoes are fork-tender and golden brown.
- Sprinkle the finished wedges with freshly chopped parsley and serve them with your preferred dipping sauce.
