Chocolate Mousse

A rich and creamy chocolate mousse that can be made ahead for easy entertaining.

Ingredients
  

For the Mousse
  • 200 g dark chocolate chopped
  • 4 large eggs separated
  • 50 g granulated sugar
  • 120 ml heavy cream whipped to soft peaks
For Garnish (Optional)
  • 1 tbsp cocoa powder unsweetened
  • 1 tbsp chocolate shavings

Method
 

  1. Melt the dark chocolate in a heatproof bowl set over a saucepan of simmering water. Stir until smooth, then remove from heat and let cool slightly.
  2. In a separate bowl, whisk the egg yolks with half of the sugar until pale and creamy.
  3. Gently fold the melted chocolate into the egg yolk mixture until well combined.
  4. In another clean bowl, whisk the egg whites until stiff peaks form. Gradually add the remaining sugar and continue whisking until glossy.
  5. Fold the whipped cream into the chocolate mixture, followed by the whisked egg whites. Be careful not to overmix.
  6. Spoon the mousse into individual serving glasses.
  7. Cover and refrigerate for at least 2 hours, or until set.
  8. Before serving, garnish with cocoa powder or chocolate shavings, if desired.

Notes

For a richer flavor, use chocolate with a higher cocoa content. You can also add a tablespoon of your favorite liqueur to the melted chocolate.
