Chocolate Crinkle Cookies

These chocolate crinkle cookies are soft, chewy, and rolled in powdered sugar for a festive look.

Ingredients
  

For the Cookies
  • 1/2 cup butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
For Rolling
  • 1/4 cup powdered sugar

Method
 

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the cocoa powder, flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be soft.
  5. Cover the bowl and refrigerate the dough for at least 1 hour, or until firm enough to roll.
  6. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Place the powdered sugar in a shallow bowl.
  8. Roll the chilled dough into 1-inch balls. Then, roll each ball in the powdered sugar, coating it completely.
  9. Place the coated balls about 2 inches apart on the prepared baking sheets.
  10. Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
  11. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For an extra festive touch, you can re-roll the cookies in powdered sugar after they have cooled slightly.
