Method
- Line a baking sheet with parchment paper.
- In a medium bowl, combine the Greek yogurt, maple syrup, and vanilla extract. Mix until smooth.
- Spread the yogurt mixture evenly onto the prepared baking sheet, forming a layer about 1/4 to 1/2 inch thick.
- Arrange the sliced strawberries over the yogurt layer.
- Drizzle the melted dark chocolate over the strawberries and yogurt.
- Place the baking sheet in the freezer for at least 3 hours, or until completely firm.
- Once frozen, break the yogurt bark into irregular pieces.
- Store the pieces in an airtight container in the freezer.

Notes
If you prefer a sweeter base, add 1 more tablespoon of maple syrup to the yogurt mixture. For a firmer bark, use full-fat yogurt.
