- Rinse chicken wings under cold water and pat them dry with paper towels.
- In a large bowl, mix olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
- Toss the chicken wings in the spice mixture until they are evenly coated.
- Preheat your smoker to 250°F using hickory or applewood chips.
- Place wings on smoker grates and smoke for 1.5 to 2 hours until they reach an internal temperature of 165°F.
- In the last five minutes of smoking, brush on BBQ sauce for a caramelized finish.
- Remove from smoker, let rest briefly, then enjoy.
