Amazing 10-min Shrimp Scampi with Bright Lemon and Butter

This recipe makes classic shrimp scampi using tender shrimp sautéed in a lemon butter garlic sauce. Finish it with parsley and serve it over pasta or with crusty bread.

Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 8 oz linguine or spaghetti optional, for serving
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1/4 tsp red pepper flakes optional
  • 1/3 cup fresh lemon juice
  • 1/2 cup chicken or seafood broth
  • 1/4 cup grated Parmesan cheese optional
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley chopped

Equipment

  • Large skillet
  • Pot (for pasta, optional)

Method
 

  1. Cook pasta according to package instructions if using; drain and set aside.
  2. Season shrimp lightly with salt and pepper.
  3. Heat olive oil and 2 tablespoons butter in a large skillet over medium heat.
  4. Add garlic and red pepper flakes and sauté for 30 seconds until fragrant.
  5. Add shrimp and cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.
  6. Add lemon juice and broth to the skillet, simmering for 2–3 minutes.
  7. Stir in remaining butter until sauce is glossy.
  8. Return shrimp to the pan and toss to coat.
  9. Serve over pasta or with bread, topped with parsley and Parmesan if desired.

Notes

Do not overcook shrimp or they will become rubbery.
Fresh lemon juice gives the best flavor.
Serve immediately for best texture.
