Ingredients

For the Wings
  • 2 pounds Chicken Wings Fresh or thawed
  • 1 tablespoon Olive Oil Extra virgin
  • 1 tablespoon Lemon Zest Freshly grated
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1 teaspoon Black Pepper Freshly cracked
  • 1/2 teaspoon Salt Adjust to taste
  • 1 teaspoon Garlic Powder
  • 1/4 teaspoon Cayenne Pepper Optional, for heat
For Serving
  • 1 whole Lemon Cut into wedges

Equipment

  • Oven
  • Large mixing bowl
  • Baking sheet
  • Parchment paper

Method

  1. Preheat your oven to 425°F (220°C). Rinse the chicken wings and pat them completely dry using paper towels to help them crisp.
  2. In a large mixing bowl, combine the olive oil, lemon zest, lemon juice, black pepper, salt, garlic powder, and cayenne pepper. Add the chicken wings and toss them until they are fully coated with the seasoning mixture.
  3. Line a baking sheet with parchment paper. Spread the seasoned wings onto the sheet in a single layer. Do not overlap them.
  4. Bake the wings for 40 to 45 minutes. Flip the wings halfway through the baking time to ensure even browning and crispiness on all sides.
  5. Remove the wings from the oven. Sprinkle them with a little extra fresh lemon juice and more cracked black pepper, if you want more intense flavor.
  6. Serve the finished Lemon Pepper Wings immediately with fresh lemon wedges on the side.

Notes

Baking the wings on a wire rack placed over the baking sheet can help air circulate underneath, leading to an even crispier result.
