Ingredients
  

  • 1 whole chicken about 4–5 lbs
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 lemon halved
  • 4 garlic cloves crushed
  • Fresh herbs rosemary, thyme, or parsley

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Rub olive oil all over the chicken.
  4. Season with salt and pepper inside and out.
  5. Stuff the cavity with lemon halves, garlic, and herbs.
  6. Place the chicken in a roasting pan.
  7. Roast for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  8. Let it rest for 10-15 minutes before carving.
