Weeknight Winner Cake

Ingredients
  

Dry Ingredients
  • 1.5 cups All-purpose flour
  • 1 tsp Baking powder
  • 0.5 tsp Salt
Wet Ingredients
  • 0.5 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 0.5 cup Milk
  • 1 tsp Vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 8x8 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set this mixture aside.
  3. In a separate large bowl, cream the softened butter and sugar together until the mixture is light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Add the vanilla extract to the wet ingredients.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix only until just combined; do not overmix.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

You can top this cake with a simple dusting of powdered sugar or your preferred frosting once it has cooled.
