- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper and cook until softened, about 5-7 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 1-2 minutes.
- Spread the cooked vegetables evenly in the prepared baking dish.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Pour the egg mixture over the vegetables in the baking dish.
- Sprinkle the shredded cheese evenly over the top.
- Bake for 30-35 minutes, or until the casserole is set and the cheese is melted and lightly golden.
- Let the casserole cool for a few minutes before slicing and serving.
Notes
You can add other vegetables like mushrooms or tomatoes. For a richer flavor, you can add cooked sausage or bacon. This casserole can be made ahead of time and reheated.
