Ingredients
  

For the Cake
  • 2.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 0.5 cup rainbow sprinkles plus more for decorating
For the Frosting
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 0.25 cup milk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients and mix on low speed until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the eggs, milk, and vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the 0.5 cup of rainbow sprinkles.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  10. While the cakes cool, prepare the frosting. In a large bowl, beat the butter until creamy.
  11. Gradually add the powdered sugar, alternating with the milk, and mix until smooth and fluffy. Stir in the vanilla extract.
  12. Once the cakes are completely cool, frost the cake and decorate with additional sprinkles.

Notes

For a layered cake, ensure the cakes are fully cooled before frosting. You can add more sprinkles to the frosting for extra color.
