Method
- Combine the milk, chilled coffee or espresso, vanilla extract, sugar, and xanthan gum in a high-speed blender.
- Add the ice cubes to the blender. Do not overfill.
- Blend on high speed until the mixture is completely smooth and has a uniform, thick consistency. You may need to stop and scrape down the sides once.
- Pour the mixture into a tall glass.
- Top with whipped cream, if desired, and serve immediately.
Notes
For the best texture, measure the xanthan gum accurately. Too much will make the drink overly gummy. If you prefer a stronger vanilla flavor, use vanilla bean paste instead of extract.
