Ingredients
  

For the Frappe Base
  • 1/2 cup Milk (whole or 2%) Use cold milk.
  • 1/4 cup Strong brewed coffee or espresso Chilled.
  • 1 tsp Vanilla extract
  • 2 tbsp Granulated sugar Adjust to taste.
  • 1/4 tsp Xanthan gum This is the key thickening agent.
  • 1 cup Ice cubes Use slightly less if your coffee is frozen.
For Topping (Optional)
  • 1/2 cup Whipped cream

Method
 

  1. Combine the milk, chilled coffee or espresso, vanilla extract, sugar, and xanthan gum in a high-speed blender.
  2. Add the ice cubes to the blender. Do not overfill.
  3. Blend on high speed until the mixture is completely smooth and has a uniform, thick consistency. You may need to stop and scrape down the sides once.
  4. Pour the mixture into a tall glass.
  5. Top with whipped cream, if desired, and serve immediately.

Notes

For the best texture, measure the xanthan gum accurately. Too much will make the drink overly gummy. If you prefer a stronger vanilla flavor, use vanilla bean paste instead of extract.
