Turkey Taco Lettuce Wraps

This recipe provides a quick and light alternative to traditional tacos using ground turkey in a flavorful taco seasoning served in crisp lettuce cups.

Ingredients
  

Taco Filling
  • 1 Tbsp olive oil
  • 3/4 cup chopped yellow onion
  • 1 lb 95% lean ground turkey
  • 2 cloves garlic
  • 1 Tbsp chili powder preferably 2 tsp regular chili powder and 1 tsp ancho chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 cup tomato sauce
  • 1/2 cup low-sodium chicken broth
  • To Taste Salt and freshly ground black pepper
For Serving
  • 1 head Iceberg or Romain lettuce leaves doubled up
  • As needed Shredded Mexican cheese for serving
  • As needed diced Roma tomatoes for serving
  • As needed diced red onion for serving
  • As needed diced avocado for serving
  • As needed chopped cilantro for serving
  • As needed light sour cream for serving

Equipment

  • Non-stick skillet

Method
 

  1. Heat olive oil in a non-stick skillet over medium-high heat.
  2. Add onion and saute 2 minutes. Add turkey and garlic, season with salt and pepper, and cook, tossing and breaking up turkey occasionally, until cooked through, about 5 minutes.
  3. Add chili powder, cumin, paprika, tomato sauce and chicken broth. Reduce to a simmer and cook about 5 minutes until sauce has reduced.
  4. Serve mixture over lettuce leaves with desired toppings.

Notes

You can make the filling ahead of time and store it in the fridge or freezer (without the toppings). You can use ground chicken instead of turkey. If you want more heat, add hot sauce, more chili powder, or red pepper flakes. If you cannot find Romaine lettuce, iceberg lettuce works well.
