Pasta
  • 12 ounces Pasta (fettuccine or penne)
Sauce Base
  • 2 tablespoons Butter
  • 2 cloves Garlic minced
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese freshly grated
  • 1/4 cup Pasta water reserved
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Black pepper freshly ground

Method
 

  1. Cook the pasta in a large pot of salted boiling water according to package directions until al dente. Before draining, reserve about 1/2 cup of the starchy pasta water.
  2. While the pasta cooks, melt the butter in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and cook for about 1 minute until fragrant. Do not let the garlic brown.
  4. Pour in the heavy cream and bring the mixture to a gentle simmer. Reduce the heat to low.
  5. Stir in the grated Parmesan cheese until the sauce is smooth. If the sauce seems too thick, add a splash of the reserved pasta water until you reach your desired consistency.
  6. Season the sauce with salt and pepper.
  7. Drain the cooked pasta and add it directly to the skillet with the cream sauce. Toss everything together until the pasta is evenly coated.
  8. Serve immediately.
