- Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a skillet over medium heat, cook the breakfast sausage, breaking it up with a spatula, until browned. Drain off any excess grease.
- Add the chopped onion to the skillet with the sausage and cook until softened, about 5 minutes.
- Spread the sausage and onion mixture evenly in the bottom of the prepared baking dish. Sprinkle the shredded cheddar cheese over the sausage mixture.
- In a separate bowl, whisk together the eggs and milk. Season with salt and pepper to taste. Pour the egg mixture evenly over the cheese and sausage.
- Arrange the frozen tater tots in a single layer over the egg mixture. Drizzle the melted butter evenly over the tater tots.
- Bake for 40-50 minutes, or until the casserole is set and the tater tots are golden brown and crispy.
- Let the casserole stand for 5-10 minutes before serving.

You can add other ingredients like cooked bacon, diced bell peppers, or spinach to the sausage mixture for extra flavor and nutrients.
