Tater Tot Breakfast Casserole

Ingredients
  

For the Casserole
  • 1 pound breakfast sausage casings removed
  • 1 medium onion chopped
  • 1 cup shredded cheddar cheese
  • 8 large eggs
  • 1/2 cup milk
  • Salt and pepper to taste
For the Topping
  • 1 bag frozen tater tots about 32 ounces
  • 1/4 cup melted butter

Equipment

  • 9x13 inch baking dish
  • Skillet
  • Spatula

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a skillet over medium heat, cook the breakfast sausage, breaking it up with a spatula, until browned. Drain off any excess grease.
  3. Add the chopped onion to the skillet with the sausage and cook until softened, about 5 minutes.
  4. Spread the sausage and onion mixture evenly in the bottom of the prepared baking dish. Sprinkle the shredded cheddar cheese over the sausage mixture.
  5. In a separate bowl, whisk together the eggs and milk. Season with salt and pepper to taste. Pour the egg mixture evenly over the cheese and sausage.
  6. Arrange the frozen tater tots in a single layer over the egg mixture. Drizzle the melted butter evenly over the tater tots.
  7. Bake for 40-50 minutes, or until the casserole is set and the tater tots are golden brown and crispy.
  8. Let the casserole stand for 5-10 minutes before serving.

Notes

You can add other ingredients like cooked bacon, diced bell peppers, or spinach to the sausage mixture for extra flavor and nutrients.
