Method
- Pat the chicken pieces dry with a paper towel. In a large bowl, combine the chicken pieces with corn starch, red pepper flakes, garlic powder, salt, and black pepper. Stir thoroughly to coat the chicken evenly.
- Melt 2 tablespoons of butter in a large heavy-duty pan over medium-high heat. Add the coated chicken pieces and cook for about 3 to 4 minutes on each side, until the chicken is cooked through and has a light golden crust.
- In a small bowl, whisk together the minced garlic, olive oil, honey, lemon juice, soy sauce, and hot sauce or sriracha until well combined.
- Pour the prepared sauce over the cooked chicken in the pan. Continue cooking for another 4 to 5 minutes, stirring occasionally, until the sauce thickens and coats the chicken bites.
- Remove from heat and serve the honey garlic chicken bites over rice, pasta, or with vegetables.

Notes
Store leftovers in an airtight container in the refrigerator for 3 to 4 days. You can adjust the spiciness by changing the amount of red pepper flakes or hot sauce. For a gluten-free option, substitute soy sauce with tamari or coconut aminos.
