Spicy Cajun Shrimp with Smoky Seasoning

  • 1.5 lbs jumbo shrimp peeled and deveined
  • 3 tbsp olive oil
  • 1 onion finely chopped
  • 5 cloves garlic minced
  • 2 cups coconut milk unsweetened
  • 2 tbsp chili powder adjust to taste
  • 1 tsp ground black pepper
  • 1 tsp sea salt
  • 1 lime juiced
  • 0.5 cup fresh cilantro chopped

Method
 

  1. In a large bowl, combine shrimp, 1 tablespoon of olive oil, and chili powder. Toss to coat evenly.
  2. Heat remaining olive oil in a skillet over medium heat. Add onions and garlic, sauté until translucent.
  3. Stir in coconut milk, lime juice, salt, and pepper, bringing to a gentle boil.
  4. Add seasoned shrimp to the skillet. Cook for 2 to 3 minutes on each side until pink and cooked through.
  5. Remove from heat and stir in cilantro. Serve hot, garnished with extra lime wedges.

Notes

This dish pairs well with steamed jasmine rice or crusty bread. Adjust spices to your preference for more or less heat.
