Smoked Salmon Cucumber Bites

These smoked salmon cucumber bites are a refreshing and easy appetizer perfect for any occasion.

Ingredients
  

For the Bites
  • 1 large cucumber about 8 inches long
  • 4 ounces smoked salmon thinly sliced
  • 1/4 cup cream cheese softened
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon lemon juice
  • 1/4 teaspoon black pepper freshly ground
Garnish (Optional)
  • 1 tablespoon capers drained
  • 1 tablespoon fresh dill sprigs

Equipment

  • Cutting board
  • Small bowl

Method
 

  1. Wash the cucumber. Cut off the ends and slice the cucumber into 12 rounds, each about 1/2 inch thick. If the cucumber is very large, you can remove some of the seeds.
  2. In a small bowl, combine the softened cream cheese, chopped dill, lemon juice, and black pepper. Mix until well combined.
  3. Spread about 1 teaspoon of the cream cheese mixture onto each cucumber slice.
  4. Top each cucumber slice with a piece of smoked salmon. You can fold or roll the salmon to fit.
  5. If using, garnish each bite with a few capers and a sprig of fresh dill.
  6. Arrange the smoked salmon cucumber bites on a serving platter and serve immediately.

Notes

For a different flavor, you can add a pinch of garlic powder to the cream cheese mixture. These bites are best served fresh.
