Skillet Garlic Butter Chicken for Cozy Weeknights

Ingredients
  

  • 1.5 pounds boneless skinless chicken breasts or thighs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

  1. Pat the chicken dry with paper towels. Season both sides with paprika, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 6 minutes per side, until golden brown and cooked through. Remove the chicken from the pan and set it aside.
  3. Reduce the heat to medium. In the same skillet, melt the butter, scraping up any bits from the bottom. Add the minced garlic and cook for 1 to 2 minutes, until fragrant.
  4. Stir in the lemon juice and let the sauce simmer for another 1 to 2 minutes.
  5. Return the chicken to the skillet and spoon the sauce over the top. Let it simmer for another 2 minutes so the flavors combine.
  6. Sprinkle with chopped parsley and serve immediately.

Notes
