Simple Vanilla Sheet Cake

Ingredients
  

Cake Batter
  • 2 cups All-purpose flour
  • 1 1/2 cups Granulated sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1 cup Unsalted butter, softened or margarine
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • 1 cup Milk
Simple Vanilla Frosting (Optional)
  • 1/2 cup Unsalted butter, softened
  • 3 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 2-4 tbsp Milk as needed for consistency

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients. Beat with an electric mixer on low speed until the mixture resembles coarse crumbs.
  4. Add the eggs and vanilla extract. Beat on medium speed until combined.
  5. Gradually add the milk, mixing until the batter is smooth. Do not overmix.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool completely in the pan before frosting or slicing.
  9. To make the frosting, beat the softened butter until creamy. Gradually add the powdered sugar and vanilla. Add milk one tablespoon at a time until you reach your desired spreading consistency. Spread over the cooled cake.

Notes

For meal prepping, store cooled, unfrosted slices in airtight containers. You can frost individual servings as you eat them.
