Simple Vanilla Cake

Ingredients
  

For the Cake
  • 1 1/2 cups All-purpose flour Sifted
  • 1 cup Granulated sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter Softened
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 2/3 cup Milk

  • Two 8-inch round cake pans
  • Electric mixer
  • Mixing bowls

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients. Mix on low speed until the mixture resembles coarse crumbs.
  4. In a separate small bowl, lightly beat the eggs, vanilla extract, and milk together.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix the batter.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before turning them out onto a wire rack to cool completely before frosting.

Notes

You can use your favorite buttercream or cream cheese frosting to finish this cake. For a stronger vanilla flavor, use vanilla bean paste instead of extract.
