Simple Steak for Two

This recipe provides instructions for preparing a straightforward steak dinner suitable for two people.

Ingredients
  

Steak and Seasoning
  • 2 Ribeye steaks (about 1 inch thick) Or your preferred cut
  • 1 tsp Coarse salt
  • 1/2 tsp Black pepper
Cooking Fats
  • 1 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 2 Garlic cloves Smashed
  • 2 Sprigs fresh thyme or rosemary

  • Cast iron skillet
  • Tongs

Method
 

  1. Remove the steaks from the refrigerator about 30 minutes before cooking to allow them to come closer to room temperature.
  2. Pat the steaks dry thoroughly with paper towels. Season both sides generously with salt and pepper.
  3. Heat the olive oil in a cast iron skillet over medium-high heat until it shimmers.
  4. Carefully place the steaks in the hot skillet. Sear for 3 to 4 minutes without moving them to develop a good crust.
  5. Flip the steaks. Add the butter, smashed garlic, and herbs to the skillet. Tilt the pan slightly and use a spoon to continuously baste the melted butter over the steaks for another 3 to 4 minutes for medium-rare.
  6. Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130°F (54°C).
  7. Remove the steaks from the skillet and place them on a cutting board. Let them rest for 5 to 10 minutes before slicing or serving.

Notes

Adjust the cooking time based on the thickness of your steaks and your desired level of doneness. Basting with the herbed butter adds flavor during the final cooking stage.
