Simple Honey Garlic Chicken Bites

Ingredients
  

For the Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
For the Sauce
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic minced
  • 1 tsp ground ginger
  • 1 tsp cornstarch mixed with 1 tbsp cold water to make a slurry

Method
 

  1. Season the cubed chicken with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, reduce the heat to medium. Add the honey, soy sauce, minced garlic, and ground ginger. Stir the mixture together.
  4. Bring the sauce to a simmer. Stir in the cornstarch slurry. Cook, stirring constantly, until the sauce thickens, about 1 minute.
  5. Return the cooked chicken to the skillet. Toss the chicken until it is fully coated in the honey garlic sauce.
  6. Serve the chicken bites immediately over rice or with a side of vegetables.
