Simple & Delicious Breakfast Bombs

These breakfast bombs use soft biscuit dough filled with eggs, cheese, and sausage or bacon. They are good for meal preparation, busy mornings, or weekend brunch.

Ingredients
  

  • 1 can refrigerated biscuit dough
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked breakfast sausage or bacon, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons melted butter
  • 1 tablespoon chopped parsley or chives (optional)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Scramble or soft-cook the eggs and season with salt and pepper.
  3. Cook the sausage or bacon and crumble it into small bits.
  4. Flatten each biscuit round using your hands or a rolling pin.
  5. Add a spoonful of eggs, cheese, and meat into the center of each dough round.
  6. Pinch the edges together to seal the filling inside and roll into a ball.
  7. Place each ball seam-side down on a lined baking tray.
  8. Brush the tops with melted butter and sprinkle with chopped herbs if using.
  9. Bake for 15-18 minutes or until golden brown.
  10. Let cool for a few minutes before serving.

Notes

Do not overfill the dough to prevent leaks while baking. You can swap cheddar for mozzarella or pepper jack. For a vegetarian option, skip the meat and add sautéed spinach or mushrooms.
