- In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, and water to create the sauce. Set aside.
- Heat the sesame oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces to the skillet. Cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken and set it aside.
- Add the broccoli, carrots, and bell peppers to the same skillet. Stir fry for 3 to 4 minutes until the vegetables are tender-crisp.
- Add the minced garlic and grated ginger to the vegetables. Cook for 1 minute until fragrant.
- Return the cooked chicken to the skillet. Whisk the sauce mixture again and pour it over the chicken and vegetables.
- Cook, stirring constantly, until the sauce thickens and coats the ingredients, about 1 to 2 minutes.
- Serve immediately over rice or noodles, if desired.
Notes
You can substitute the chicken with shrimp or tofu. Use any firm vegetables you have on hand, such as snap peas or mushrooms.
