  • 1 lb Boneless, skinless chicken breasts Cut into bite-sized pieces
  • 1 tbsp Vegetable oil
  • 2 cups Broccoli florets
  • 1 cup Sliced carrots
  • 1 cup Sliced bell peppers (any color)
  • 1/2 cup Soy sauce Low sodium preferred
  • 2 tbsp Brown sugar
  • 1 tsp Ground ginger
  • 2 cloves Garlic Minced

Method
 

  1. In a small bowl, whisk together the soy sauce, brown sugar, ginger, and minced garlic. Set the sauce aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces to the hot skillet. Cook, stirring occasionally, until the chicken is browned and cooked through, about 5 to 7 minutes.
  4. Add the broccoli and carrots to the skillet. Stir-fry for 3 minutes until they begin to soften slightly.
  5. Add the sliced bell peppers and cook for 1 more minute.
  6. Pour the prepared sauce over the chicken and vegetables. Stir constantly until the sauce thickens and coats everything evenly, about 1 to 2 minutes.
  7. Remove from heat. Serve immediately over rice or noodles if desired.
