Method
- In a bowl, toss the sliced beef with cornstarch until lightly coated. Set aside.
- In a separate small bowl, whisk together the beef broth, soy sauce, brown sugar, sesame oil, and ground ginger to make the sauce. Set this aside.
- Heat 1 teaspoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef and cook until browned, about 2 to 3 minutes. Remove the beef from the skillet and set it aside.
- Add the remaining 2 teaspoons of oil to the skillet. Add the broccoli florets and cook for 3 to 4 minutes until they are bright green and slightly tender. Add the minced garlic and cook for 30 seconds until fragrant.
- Return the cooked beef to the skillet with the broccoli. Pour the prepared sauce over the beef and broccoli. Cook, stirring constantly, until the sauce thickens, about 1 to 2 minutes.
- Serve the stir fry immediately over rice, if desired.
Notes
For a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir this slurry into the sauce during the last minute of cooking.
