Simple Beef and Broccoli Stir Fry

This recipe makes a quick beef and broccoli stir fry. It uses a simple sauce and cooks fast for a weeknight meal.

Ingredients
  

For the Beef and Broccoli
  • 1 pound Flank steak or sirloin, thinly sliced against the grain
  • 1 tablespoon Cornstarch For coating the beef
  • 1 tablespoon Vegetable oil Divided
  • 3 cups Broccoli florets
  • 2 cloves Garlic, minced
For the Sauce
  • 1/2 cup Beef broth
  • 1/4 cup Soy sauce
  • 2 tablespoons Brown sugar
  • 1 teaspoon Sesame oil
  • 1 teaspoon Ground ginger

Equipment

  • Large skillet or wok
  • Small bowl

Method
 

  1. In a bowl, toss the sliced beef with cornstarch until lightly coated. Set aside.
  2. In a separate small bowl, whisk together the beef broth, soy sauce, brown sugar, sesame oil, and ground ginger to make the sauce. Set this aside.
  3. Heat 1 teaspoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef and cook until browned, about 2 to 3 minutes. Remove the beef from the skillet and set it aside.
  4. Add the remaining 2 teaspoons of oil to the skillet. Add the broccoli florets and cook for 3 to 4 minutes until they are bright green and slightly tender. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Return the cooked beef to the skillet with the broccoli. Pour the prepared sauce over the beef and broccoli. Cook, stirring constantly, until the sauce thickens, about 1 to 2 minutes.
  6. Serve the stir fry immediately over rice, if desired.

Notes

For a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir this slurry into the sauce during the last minute of cooking.
