Simple Baked Chicken Thighs

This recipe provides instructions for baking bone-in, skin-on chicken thighs until they are fully cooked and the skin is crisp.

Ingredients
  

For the Chicken
  • 4 bone-in, skin-on chicken thighs About 6-8 ounces each
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika

  • Wire rack

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Place a wire rack on top of a baking sheet.
  2. Pat the chicken thighs dry thoroughly with paper towels. This step helps the skin crisp up.
  3. In a small bowl, mix together the salt, pepper, and paprika.
  4. Rub the spice mixture evenly over all surfaces of the chicken thighs, including under the skin if possible.
  5. Place the seasoned chicken thighs skin-side up on the wire rack on the baking sheet.
  6. Bake for 35 to 40 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) in the thickest part of the thigh.
  7. Remove from the oven and let the chicken rest on the rack for 5 minutes before serving.

Notes

For extra crispy skin, you can broil the chicken for the last 1 to 2 minutes, watching closely to prevent burning.
