Method
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Place a wire rack on top of a baking sheet.
- Pat the chicken thighs dry thoroughly with paper towels. This step helps the skin crisp up.
- In a small bowl, mix together the salt, pepper, and paprika.
- Rub the spice mixture evenly over all surfaces of the chicken thighs, including under the skin if possible.
- Place the seasoned chicken thighs skin-side up on the wire rack on the baking sheet.
- Bake for 35 to 40 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) in the thickest part of the thigh.
- Remove from the oven and let the chicken rest on the rack for 5 minutes before serving.
Notes
For extra crispy skin, you can broil the chicken for the last 1 to 2 minutes, watching closely to prevent burning.
