Roasted Garlic Parmesan Carrots

Ingredients
  

  • 1 lb Carrots, peeled and cut into 1-inch pieces
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 cup Parmesan cheese, grated

  • Large bowl

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cut carrots with olive oil, minced garlic, salt, and pepper until the carrots are evenly coated.
  3. Spread the coated carrots in a single layer on the prepared baking sheet.
  4. Roast for 20 minutes. Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the carrots.
  5. Return the carrots to the oven and roast for another 10 minutes, or until the carrots are tender and the cheese is melted and lightly browned.
  6. Serve immediately.

Notes

You can substitute fresh herbs like parsley for added flavor before serving.
