Roasted Asparagus with Parmesan

Ingredients
  

  • 1 lb Asparagus trimmed
  • 2 tbsp Olive oil
  • 1/4 cup Parmesan cheese grated
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the trimmed asparagus with olive oil, salt, and pepper until evenly coated.
  3. Spread the asparagus in a single layer on a baking sheet.
  4. Roast for 10-15 minutes, or until tender-crisp.
  5. Sprinkle the grated Parmesan cheese over the asparagus during the last 2 minutes of roasting.
  6. Serve immediately.

Notes

You can add a squeeze of lemon juice before serving for extra brightness.
