- Combine the eggs, milk, and salt in a bowl using a whisk. Set the mixture aside.
- Place the butter in a skillet and heat it over medium heat.
- When the butter is warm, add the onion, bell peppers, mushrooms, and a small amount of salt. Cook briefly until the vegetables soften.
- Add the chopped bacon to the vegetable mixture.
- Pour the egg mixture into the skillet. Stir gently to scramble the eggs to your preferred texture.
- Finish by sprinkling the cheddar cheese and chopped chives over the eggs.
Notes
This recipe is fast enough for a weekday but tastes special enough for the weekend. If you do not have bacon, you can substitute it with diced ham or omit it entirely.
