- Cook the pasta in a large pot of salted boiling water according to package directions until al dente. Before draining, reserve about 1 cup of the starchy pasta water.
- While the pasta cooks, melt the butter in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes to the skillet. Cook for about 1 minute until fragrant. Do not let the garlic brown.
- Drain the pasta and add it directly to the skillet with the garlic butter.
- Pour in 1/2 cup of the reserved pasta water. Toss continuously to emulsify the sauce. The water and butter should combine to coat the pasta.
- Remove the skillet from the heat. Stir in the grated Parmesan cheese and fresh parsley. Add more pasta water, a tablespoon at a time, if the sauce seems too dry.
- Season with black pepper to taste. Serve immediately with extra Parmesan cheese.
Notes
For a richer flavor, you can use brown butter instead of regular melted butter. Melt the butter slowly until the milk solids toast and turn light brown before adding the garlic.
