Quick Breakfast Casserole

Ingredients
  

For the Casserole
  • 1 pound sausage breakfast style, crumbled
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 6 eggs
  • 2 cups milk
  • 2 cups shredded cheese cheddar or your favorite
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

  • Large skillet
  • Mixing bowl

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large skillet, cook the sausage over medium heat until browned. Drain off any excess grease. Add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  3. Spread the cooked sausage and vegetable mixture evenly in the prepared baking dish.
  4. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. Pour the egg mixture over the sausage and vegetables in the baking dish.
  6. Sprinkle the shredded cheese evenly over the top.
  7. Bake for 40-45 minutes, or until the casserole is set and lightly golden brown. Let it stand for a few minutes before serving.

Notes

You can add other vegetables like mushrooms or spinach. For a spicier casserole, add a pinch of red pepper flakes.
