Quick Beef Au Jus

A rich and flavorful beef au jus recipe that can be made with or without beef drippings in just 15 minutes.

Ingredients
  

For the Au Jus
  • 4 cups beef broth low sodium recommended
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon black pepper freshly ground
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • 2 tablespoons butter optional, for richness
  • 1/4 cup beef drippings optional, from roasted beef

  • Whisk

Method
 

  1. If using beef drippings, add them to a saucepan over medium heat. If not using drippings, proceed to the next step.
  2. Pour in the beef broth, Worcestershire sauce, and soy sauce. Add the black pepper.
  3. Bring the mixture to a simmer, stirring occasionally.
  4. Whisk in the cornstarch slurry. Continue to simmer and whisk until the au jus thickens slightly, about 2-3 minutes.
  5. If using, whisk in the butter until melted and fully incorporated.
  6. Taste and adjust seasoning if needed. Serve hot.

Notes

This au jus is perfect for dipping roast beef sandwiches, drizzling over steaks, or as a base for other sauces. For a deeper flavor, you can add a sprig of fresh thyme or rosemary while simmering, then remove before serving.
