- If using beef drippings, add them to a saucepan over medium heat. If not using drippings, proceed to the next step.
- Pour in the beef broth, Worcestershire sauce, and soy sauce. Add the black pepper.
- Bring the mixture to a simmer, stirring occasionally.
- Whisk in the cornstarch slurry. Continue to simmer and whisk until the au jus thickens slightly, about 2-3 minutes.
- If using, whisk in the butter until melted and fully incorporated.
- Taste and adjust seasoning if needed. Serve hot.
Notes
This au jus is perfect for dipping roast beef sandwiches, drizzling over steaks, or as a base for other sauces. For a deeper flavor, you can add a sprig of fresh thyme or rosemary while simmering, then remove before serving.
