- Heat the olive oil and butter in a large pot or deep skillet over medium heat. Season the chicken with salt, pepper, and paprika. Add the chicken to the pot and cook until lightly golden on both sides. Remove the chicken and set it aside.
- Add the minced garlic to the same pot and sauté briefly until fragrant. Do not let it burn.
- Pour in the chicken broth and scrape the bottom of the pot to lift any browned bits. Add the pasta directly to the pot, making sure it is mostly covered by the liquid.
- Bring the mixture to a gentle simmer. Cook, stirring sometimes, until the pasta is tender and most of the liquid has been absorbed.
- Lower the heat. Stir in the heavy cream, Parmesan cheese, and Italian seasoning until a smooth sauce forms.
- Return the cooked chicken to the pot. Simmer gently until the chicken is fully heated and coated with the sauce. Taste the dish and add more seasoning if needed.
- Let the pasta rest for a few minutes before serving. Garnish with fresh parsley.
