Pot Chicken Pasta with Garlic Butter

This recipe makes a creamy garlic butter chicken pasta cooked in one pot. It uses simple ingredients to create a rich sauce that coats the pasta as it cooks.

Ingredients
  

For the Chicken and Pasta
  • 1 Boneless, skinless chicken breasts sliced
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Paprika
  • 12 oz Fettuccine, penne, or linguine
For the Garlic Butter Sauce
  • 4 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 4 cloves Fresh garlic minced
  • 3 cups Chicken broth
  • 1 cup Heavy cream
  • 1/2 cup Grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp Fresh parsley for garnish

Method
 

  1. Heat the olive oil and butter in a large pot or deep skillet over medium heat. Season the chicken with salt, pepper, and paprika. Add the chicken to the pot and cook until lightly golden on both sides. Remove the chicken and set it aside.
  2. Add the minced garlic to the same pot and sauté briefly until fragrant. Do not let it burn.
  3. Pour in the chicken broth and scrape the bottom of the pot to lift any browned bits. Add the pasta directly to the pot, making sure it is mostly covered by the liquid.
  4. Bring the mixture to a gentle simmer. Cook, stirring sometimes, until the pasta is tender and most of the liquid has been absorbed.
  5. Lower the heat. Stir in the heavy cream, Parmesan cheese, and Italian seasoning until a smooth sauce forms.
  6. Return the cooked chicken to the pot. Simmer gently until the chicken is fully heated and coated with the sauce. Taste the dish and add more seasoning if needed.
  7. Let the pasta rest for a few minutes before serving. Garnish with fresh parsley.

Notes
