- Melt butter in a large saucepan over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Pour in beef broth and water. Add thyme sprig, bay leaf, and black pepper.
- Bring the mixture to a simmer, then reduce heat to low. Cover and let it simmer for at least 60 minutes to allow flavors to meld.
- Remove the thyme sprig and bay leaf. Stir in Worcestershire sauce.
- If you prefer a thicker au jus, whisk in the cornstarch slurry and simmer for another 1-2 minutes until thickened.
- Strain the au jus through a fine-mesh sieve into a clean container. Discard the solids.

Notes
For an even richer flavor, you can add beef bones or a piece of roasted beef carcass to the simmering liquid. Adjust seasoning with salt if needed.
