Method
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. This should take about 8-10 minutes.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes. Cook for about 1 minute until the garlic is fragrant. Do not let the garlic brown.
- Before draining the pasta, reserve about 1/2 cup of the starchy cooking water. Drain the pasta using a colander.
- Add the drained pasta directly to the skillet with the garlic oil mixture. Toss to coat.
- Pour in about 1/4 cup of the reserved pasta water. Toss continuously until a light sauce forms that coats the pasta. Add more water if the sauce seems too dry.
- Remove the skillet from the heat. Stir in the grated Parmesan cheese, chopped parsley, salt, and pepper. Toss well to combine.
- Serve immediately with extra Parmesan cheese on top.
Notes
If you prefer a richer sauce, you can add a tablespoon of butter along with the pasta water in step 4.
