Parmesan Potatoes with Garlic & Herbs

These roasted potatoes achieve a golden-brown, crispy exterior while keeping the centers fluffy. They are seasoned with herbs and garlic, making them a simple side dish.

Ingredients
  

  • 2 lbs Yukon Gold potatoes
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon fresh rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat your oven to 425°F. Cut the potatoes into 1-inch chunks.
  2. Boil the potatoes in salted water for 8 minutes until the edges soften slightly.
  3. Drain the potatoes. Shake them in the colander to rough up the edges.
  4. Toss the potatoes with olive oil, minced garlic, rosemary, salt, and pepper.
  5. Spread the seasoned potatoes onto a baking sheet in a single layer.
  6. Roast for 45 minutes, flipping the potatoes halfway through the cooking time.

Notes

Par-boiling the potatoes first helps create a crispy exterior. Do not overcrowd the baking pan. Serve these potatoes immediately after they come out of the oven.
