Parmesan Crusted Chicken Breasts with Crunch

This recipe shows you how to make crispy, flavorful chicken breasts using an air fryer. The chicken is coated in a mayonnaise and panko mixture, seasoned, and then topped with Parmesan cheese and garlic butter before a final crisping.

Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts
Coating and Seasoning
  • 1/2 cup mayonnaise
  • 1 cup Panko bread crumbs
  • 1 tablespoon Italian seasoning
  • 1 teaspoon poultry seasoning
  • 2/3 cup Parmesan cheese, grated
Garlic Butter Topping
  • 1 tablespoon garlic, minced
  • 4 tablespoons butter, unsalted

Equipment

  • Air fryer
  • Mallet
  • Small bowl
  • Resealable bag

Method
 

  1. Cut the chicken breasts in half. Use a mallet to thin the chicken pieces.
  2. Mix the Italian seasoning and poultry seasoning with the Panko bread crumbs in a small bowl.
  3. Place the mayonnaise in a resealable bag. Add the chicken to the bag and coat both sides.
  4. Dip the coated chicken into the panko and herb bread crumb mix.
  5. Place the coated chicken pieces in a greased air fryer basket or tray.
  6. Spray the entire coating with olive oil for crispiness.
  7. Mix the butter and minced garlic in a small mixing bowl.
  8. Set the air fryer to 370 degrees F and cook for 7 minutes. Flip the chicken and air fry for 5 more minutes. Check that the internal temperature reaches at least 165 degrees F.
  9. Top the chicken with the grated Parmesan cheese, then top the cheese with the garlic butter mixture.
  10. Return the chicken to the air fryer for 2 to 3 minutes, just until the cheese and butter start to melt.
  11. Plate and serve the chicken.

Notes

For the initial coating, you can use cooking spray or a light brushing of olive oil on the basket or tray to prevent sticking.
