Method
- Cut the chicken breasts in half. Use a mallet to thin the chicken pieces.
- Mix the Italian seasoning and poultry seasoning with the Panko bread crumbs in a small bowl.
- Place the mayonnaise in a resealable bag. Add the chicken to the bag and coat both sides.
- Dip the coated chicken into the panko and herb bread crumb mix.
- Place the coated chicken pieces in a greased air fryer basket or tray.
- Spray the entire coating with olive oil for crispiness.
- Mix the butter and minced garlic in a small mixing bowl.
- Set the air fryer to 370 degrees F and cook for 7 minutes. Flip the chicken and air fry for 5 more minutes. Check that the internal temperature reaches at least 165 degrees F.
- Top the chicken with the grated Parmesan cheese, then top the cheese with the garlic butter mixture.
- Return the chicken to the air fryer for 2 to 3 minutes, just until the cheese and butter start to melt.
- Plate and serve the chicken.

For the initial coating, you can use cooking spray or a light brushing of olive oil on the basket or tray to prevent sticking.
