  • 1/2 teaspoon black pepper

  • 1/2 teaspoon baking powder Crucial for crispiness.

Method
 

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil. Place a wire rack on top.
  2. In a large bowl, toss the chicken wings with the olive oil until they are nicely coated.
  3. In a separate bowl, mix together the garlic powder, onion powder, smoked paprika, salt, black pepper, cayenne pepper (if using), and baking powder.
  4. Sprinkle the spice mixture over the wings and toss until they're generously coated.
  5. Arrange the wings in a single layer on the wire rack, ensuring they’re not touching.
  6. Bake the wings in your preheated oven for 40-45 minutes, flipping halfway through for even browning.
  7. Remove from the oven and let cool for a few minutes before serving.
