Chicken
  • 4 boneless, skinless chicken breasts About 6 ounces each
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Method
 

  1. Pat the chicken breasts dry with paper towels. This helps them brown better.
  2. In a small bowl, mix together the salt, pepper, and garlic powder. Sprinkle this mixture evenly over both sides of the chicken breasts.
  3. Heat the olive oil in a large skillet over medium-high heat until the oil shimmers.
  4. Carefully place the seasoned chicken breasts into the hot skillet. Do not overcrowd the pan; cook in batches if necessary.
  5. Cook for 5 to 7 minutes on the first side until golden brown. Flip the chicken.
  6. Reduce the heat to medium-low. Cover the skillet and cook for another 8 to 10 minutes, or until the internal temperature reaches 165 degrees Fahrenheit when checked with a meat thermometer.
  7. Remove the chicken from the skillet and let it rest on a cutting board for 5 minutes before serving.

Notes

If your chicken breasts are very thick, you may need to pound them slightly to an even thickness before seasoning. This ensures they cook evenly and quickly.
