Ingredients

Chicken
  • 4 boneless, skinless chicken breasts Chicken breasts About 6 ounces each
Seasoning and Coating
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Garlic powder
  • 1/4 cup All-purpose flour
Cooking
  • 2 tablespoons Olive oil Or other cooking oil

Equipment

  • Skillet
  • Meat thermometer

Method

  1. Place the chicken breasts between two sheets of plastic wrap. Pound them to an even thickness, about 3/4 inch thick.
  2. In a small bowl, mix together the salt, pepper, and garlic powder.
  3. Place the flour on a shallow plate. Dredge each pounded chicken breast lightly in the flour, shaking off any excess.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Carefully place the floured chicken breasts in the hot skillet. Cook for 5 to 7 minutes per side until golden brown and cooked through. The internal temperature should reach 165 degrees Fahrenheit.
  6. Remove the chicken from the skillet and let it rest for 5 minutes before serving.

Notes

You can serve this chicken with a simple pan sauce made by deglazing the skillet with a splash of chicken broth or white wine after removing the chicken.
