Melt In Your Mouth Chicken

Ingredients
  

  • 2/3 cup Mayonnaise
  • 1/2 cup Parmesan cheese, finely grated (about 2 ounces)
  • 1 teaspoon Garlic powder
  • 2 large Chicken breasts, boneless skinless (about 1 1/2 pounds total)
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper, freshly ground
  • Fresh parsley leaves, chopped for garnish (optional)

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
  2. In a small bowl, mix together the mayonnaise, grated Parmesan cheese, and garlic powder until combined.
  3. Pat the chicken breasts dry with paper towels. Season both sides of the chicken with kosher salt and black pepper.
  4. Spread the mayonnaise mixture evenly over the top of each chicken breast.
  5. Place the coated chicken breasts in the prepared baking dish.
  6. Bake for 20 to 25 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74 degrees Celsius) and the topping is lightly golden brown.
  7. Remove the chicken from the oven. Garnish with fresh parsley, if using, before serving.

Notes

This chicken pairs well with roasted vegetables or a simple side salad for a complete meal.
