  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Mix the spices well.
  3. Add the trimmed chicken thighs to the bowl. Toss them thoroughly until every piece is evenly coated with the seasoning mixture.
  4. Place the seasoned chicken thighs in a single layer on the prepared baking sheet. Do not overlap them.
  5. Bake for 25 to 30 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius). Cooking time may vary based on the thickness of the thighs.
  6. Remove the chicken from the oven. Let it rest for 5 minutes before slicing or portioning for storage.
  7. Store the cooked chicken in airtight containers in the refrigerator for up to 4 days, or freeze for longer storage.

Notes

When reheating, add a splash of water or broth to the container before microwaving. This helps keep the chicken moist. These thighs pair well with roasted vegetables or rice for a complete meal prep serving.
